In the livestock and meat sector, the inspectors of the competent body primarily inspect slaughterhouses and establishments dealing with slaughter animals. It is checked that the weight is correctly determined at the slaughterhouse, in particular that the cutting of the carcases of bovine, porcine and ovine animals prescribed at the time of weighing is complied with. In addition, the correct classification into the commercial classes is monitored. Weighing and classification are carried out by approved classifiers of an approved classification company. The training, examination and approval of classifiers is also the responsibility of the competent body.
The slaughter cattle sector is subject to strong fluctuations due to the constant change of supply and demand, which is why the instrument of official price determination contributes to ensuring market transparency. In this case, the slaughterhouses subject to the reporting obligation shall be checked by the inspectors of the competent authority.
The responsibility lies with the Lower Saxony State Office for Consumer Protection and Food Safety (LAVES).
